Welcome Max to the new Yard Restaurant

max-01I am Max and am delighted to let you know that I am the new head chef at The New Yard Restaurant in Trelowarren.  I am married to Jo and we are settling happily into Trelowarren and life on the Lizard.  We moved from St Martins in the Scilly Isles, where I have been head chef for just over 2 years.

It is so beautiful being surrounded by trees in Trelowarren and am finding the scenery on the Lizard so varied, we are really enjoying exploring all of the beaches and coast paths.  One of my real passions is foraging, I love coming home with a respectable haul of razor clams, cockles and other delights.  I lot of the time I come back ruminating on the fact that as hard as I might try there is only so much fun that one can have with seaweed.

max-02With my spring menus in mind, I emerged blinking into the bright sunlight this morning, and headed out with my trusty hedgerow guide book.  I was thrilled to see just how much wild food was available right on my doorstep.  With wild garlic everywhere, wood sorrel with its delicate white and pink veined flowers which line the path down to the Long Valley, along with the somewhat alarmingly named but really pleasant addition to any chef’s larder, the hairy bittercress.  My spring menu ideas are now coming together with the abundance of locally sourced food, some only metres from the restaurant itself.

I very much look forward to cooking for you this summer and I hope that you will enjoy my new menus using all the very best ingredients from the Lizard and West Cornwall.  The menus will be available for your to saviour on the website, and I hope it will not be long before you are able to sample our exceptional food at exception prices.

A quick resumé of Max:

Max began his fine dining career at the age of 17 at the Hintlesham Hall Hotel in Suffolk

He was a demi chef de partie for the Millenium Cruise on the QE2 before joining the Manor House Hotel in Morton in Marsh

Max’s first job in Cornwall was at Talland Bay Hotel just outside Looe where he worked as sous chef.  Working with Shay Cooper they rose from 2 to 3 rosettes and Max fell in love with both Jo(his wife) and Cornwall.

Max has also worked with Kenny Atkinson in Durham before returning to be head chef at St Martins Hotel in the Scillies.

It is Max’s love of fresh ingredients that are prepared simply in order to appreciate the quality of all of the ingredients used, that makes him the right person to take on The New Yard Restaurant.  We are pleased to have found a chef who specialises in clean flavours using local ingredients and has fitted into the team so well.  We wish him every success here at Trelowarren.
